Peach Oatmeal Pancakes

These Peach Oatmeal Pancakes are a healthy, filling breakfast that tastes delicious and comes together with ease! You’ll simply toss everything but the peaches into your blender and blend it until smooth. Then stir in the peaches and cook the pancakes on your stovetop. The result is tasty, hearty pancakes that are a bit denser than traditional ones, but still fluffy and delicious. I found these Peach Oatmeal Pancakes to be very filling and I think the oats and cinnamon with the sweet, juicy peaches are a great combination.
Serving Size and Tracking
I couldn’t decide whether a serving for this recipe should be two pancakes or three pancakes, because it really depends on how hungry you are and what else you’re serving them with. I decided to list the nutrition information and Weight Watchers Points per pancake to make it easier. Since the WW Points don’t directly double or triple in correlation with the serving size, I also listed the Points per serving of two or three pancakes for both the traditional WW plan and the diabetic plan. - Each pancake is just 95 calories with 4 grams of protein, or 1 WW Point (or 3 points if following the diabetic Weight Watchers plan)!
- For the traditional WW plan, you can have two pancakes for 2 Points, or three pancakes for 4 Points.
- For the diabetic WW plan, you can have two pancakes for 5 Points or three pancakes for 8 Points.
Recipe Notes
- Peaches: I used fresh peaches in this recipe. You can use yellow or white peaches. You’ll see I used white because that’s what I had on hand! If it’s not peach season, you can defrost some frozen peaches or use canned peaches packed in water or juice and drained.
- Oats: You’ll want to use old fashioned oats (also known as rolled oats) in these Peach Oatmeal Pancakes. I use these in a lot of recipes, particularly in my baked oatmeal cups, so if you’re looking for ways to use them up, check out the Oats section of my recipe index!
- Blender: You will need to use a blender for this recipe in order to get the pancake batter to the right consistency. It’s easy and only takes a minute to blend! I am obsessed with my blender, so if you’re in the market I highly recommend checking out this Breville one (affiliate link). It blends things beautifully, has several different modes including smoothie modes, and it has a self-cleaning feature that I can’t say enough about. I left the blender pitcher sitting on the counter while I finished making pancakes and after breakfast I just put a little warm water and a squirt of dish soap in and hit the auto-clean button and then just rinsed it out after. It’s the best.
- Alternate mix-ins: If peaches aren’t your thing or you just don’t have them on hand, no worries! These pancakes would be terrific with blueberries, strawberries, apples, raspberries, blackberries, bananas, or pretty much any other flavor you like mixed into your pancakes. Choose your own adventure.
- Serving suggestions: I served these with a bit of Land O’Lakes light butter spread, additional fresh peach slices, and a sprinkle of powdered sugar on top. Alternatively, they’re great with butter and syrup, fruit and whipped cream, or however you most enjoy topping your pancakes!

Peach Oatmeal Pancakes
Ingredients
- ½ cup skim milk
- ½ cup plain nonfat Greek yogurt
- 2 large eggs
- 2 tablespoons light butter, melted (I used Land O’Lakes light butter spread with Canola Oil)
- 1 tablespoon maple syrup
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 2 cups uncooked old fashioned/rolled oats
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 1 cup peeled and diced peaches
Instructions
- In the pitcher of your blender, add the milk, Greek yogurt, eggs, melted butter, syrup, sugar, vanilla extract, oats, baking powder, cinnamon, and salt. Blend the contents until smooth.
- Transfer the contents of your blender to a mixing bowl and stir in the chopped peaches until mixed into the batter.
- Mist a nonstick griddle, griddle pan, or large skillet with cooking spray and bring it over medium heat. Scoop a ¼ cup of batter onto the heated pan and use the back of a spoon to smooth it out into a flat(ish) circle. Repeat in batches (depending on how many pancakes fit on your pan at once) to form 12 pancakes. Cook on one side for 3-5 minutes until bottom is golden and pancake is “flippable.” Once flipped cook another 2 minutes or until golden on the other side as well. Repeat until you have 12 pancakes (pancakes in later batches will likely cook in less time).
