Peel the apple and then shred (I used the largest holed side of a box grater). Wrap the shredded apple in paper towels and squeeze out most of the moisture. Unwrap to use in the next step.
Crack the egg into a mixing bowl and add the garlic, parsley, ground sage, salt, pepper, and crushed red pepper. Stir together using a fork until the egg is beaten and combined with the spices. Add the shredded apple and stir to combine. Add the ground chicken and combine using clean hands or a fork until mixed. Cover and refrigerate for at least an hour, or overnight (my preference) so flavors can meld and the mixture can firm up a bit.
Split the chicken mixture into eight balls, then press the balls into patties, about ½ inch thick. Drizzle the oil onto a large griddle pan or skillet and bring over medium heat. When hot, place the patties on the pan in a single layer, not touching each other. Cook for 4-5 minutes and then flip. Cook on the other side for another 4-5 minutes until cooked through.
