Ingredients

  • 1 tablespoon dry mustard powder (such as Colman’s – found by the spices)
  • 2 teaspoons packed brown sugar
  • 1 ½ teaspoons paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon cayenne pepper (this adds a subtle kick, increase to ¼ teaspoon if you want it spicier)
  • 1 lb raw boneless, skinless chicken breast cut into small bite-sized pieces
  • 1 tablespoon olive oil

Instructions

  • In a small dish, stir together your seasoning mix: mustard powder, brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  • Place the chicken pieces into a mixing bowl. Add the seasoning mix to the chicken pieces. Stir the contents of the bowl until the chicken pieces are coated with the spices.
  • Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (don’t overcrowd the pan) and stir to break them up and coat them in the oil. Cook the chicken for 6-8 minutes, stirring every couple minutes. Once the chicken is cooked through and a bit golden on the outside, remove from heat and serve.
