Slice the potato into very thin rounds. Place them in a large ziploc bag and drizzle the oil over them. Seal the bag and toss to evenly coat the potatoes. Add the salt & toss again.
Cover a large plate with parchment paper and lightly mist the paper with spray. Working in batches if needed, place the potato slices on the parchment in a single layer. Microwave the potatoes on high for 5-10 minutes. (NOTE: microwaves are so different that the first time you make these I just recommend you keep an eye on them and figure out how long it takes in yours) or until the chips are completely crisp (be careful not to burn them). Allow them to cool for about 2 minutes and serve!
